The whole experience at Es Tragon was impeccable.They went above and beyond in every aspect. Attention to every detail and tailored the experience to us and our guests.They took care of our children like their own.We are so grateful, thank you!The food was phenomenal. Absolutely sensational.From beginning to the end. Each part of the journey was absolutely incredible and mouthwatering.We cannot wait to be back.Thank you all! Essential. A temporal and geographical travel proposal. The commitment to new, local and sustainable ingredients, with the requirement of being aromatic and providing palative novelty, is worthy of praise and veneration. It is the first time that I have seen so much elaboration generated almost from scratch in the premises itself, oils, cheeses, sausages, liquors... Incredible and I would venture to say unique.

Simply a wonderful "18" course meal! Having eaten at many Michelin's in various countries, this restaurant appears to be much closer to a 2* than a 1* and I would expect it to rise in the rankings in the coming 2-3 years if they can maintain the excellence of this experience. The menu was sophisticated yet playful, extremely polished service, but you were able to still get a sense of the individual personalities of the staff, which I certainly appreciate. Like many restaurants of this caliber, it is the intersection between a dining experience, a performance and a celebration of the arts. Es Tragon delivers across the board. Well done.

If you are vegetarian or do not consume fish, I do not recommend it. They make you skip the steps, there are no options, even with advance notice and they charge you for the full menu.

Without a doubt one of the best gastronomic experiences we have had with Álvaro Sanz, from the first pass to the last they never cease to surprise you, in our case we chose the hedgehog menu. The place is very beautiful and there is tranquility. The entire team is wonderful, but a special mention to Elisa, she made us feel at home without neglecting professionalism. Without a doubt one of the biggest attractions that the island can have. We hope to return soon and be able to continue seeing your growth and everything that is to come to you.

Each dish reinterprets, in a subtle and perfectly presented way, an Ibizan flavor, a part of the gastronomic history of the Pitiusas... Even the cafè caleta! Unforgettable. How to taste a bullit de peix, an arròs a banda, an amanida pagesa and many more, through small plated treasures...uf! A 10.

The only restaurant with a Michelin star on the island and boy does it live up to it. It is highly recommended to take the large 19-course menu with pairing, the experience is to take anyone's breath away. The staff is simply impeccable, they attend to you personally, always calling you by name, the menus cost €134 for the short menu and €180 for the long menu, pairing €85 (August 2023) My favorite restaurant in Ibiza! Congratulations!

We came here for my 40th birthday and I treated my friends, I felt like it was really good value for an experience on oar with what you get in a Michelin starred restaurant. The stew injected into an egg yolk and the typical Madrid bocadillo were stand outs but really you are spoiled for choice and the quiet location makes for a good departure from the busy streets of Ibiza town.

Great experience. Everything edible and drinkable has a story to it and the staff do a great job with the narrationAmir specifically did a fantastic job in personally attending to us from start to finish and helped clarify any questions we had; his high level of insight helped us learn new things.The terrace is also beautiful and most of the menu is actually produced freshly from the garden itselfA wonderful visit which should be added to everyone's Ibiza experience at least once

A unique experience to discover new tastes using local raw products. Nothing can be compared with this. We started our journey with a guided tour of vegetal flavors with the chef, before an exploration following the Mediterranean sea shore.I will never forget this and it is worth a visit if you can afford it. More than 30 people are working for less than 25 customers. Of course the result is exceptional even if some assemblages were unusual: this is the whole idea.

This isn’t a “dining only” place. You’ll get entertained, learn about the local food culture and history, and on top - have a wide variety of exceptional food! I would definitely come back again!

The concept of Es Tragón is unique: each and every dish is carefully prepared and has a story on its own. The restaurant is located in a beautiful country house, with many rooms. It’s incredible what they have achieved in terms of sustainability and self-management: everything seems to be produced there. Their menu is full of interesting twists, ranging from homages to previous civilizations to traditional Spanish dishes. The staff is very knowledgeable and would serve every dish to perfection. Dishes are very well prepared, to every detail, and the flavors are quite unique and delicious. The wine pairing is good, and there are some other good options in the menu. However, it’s not a very relaxing atmosphere: it feels like you are constantly under pressure to “eat in the right way”. I had they impression the staff is too concerned to have perfection in every detail, but to a level where guests might feel uncomfortable. Also it’s not easy to have small talk with the staff, as it feels like it’s a distraction and the topic would quickly come back to the menu concept. In the end, despite almost 3 hours, the dinner felt a bit rushed and not relaxing. Again, it’s an amazing experience and worth its price, but could be delivered in a lighter easy.

An incredible food experience with impeccable and creative presentation.The staff was extraordinary and clearly highly trained in what they do.I loved the attention to detail and creativity. At one point we had to whisk our own aioli which just put a huge smile on my face.I loved every minute here.

EsTragòn is a unique gastronomic experience: Michelin-star worthy food presented in the most innovative ways. We had the 90€ “medium” menu - each of the 10+ dishes, from the “tribute to the Ibizan pork” tree-like introductory snack (see pictures to understand), to the many tapas (including the divine squid roll), the fabulous stew and rice dishes, and the postres (the almond cheese!) was absolutely genius/delicious, most of the ingredients being local. The staff was amazing, giving us details and precise indications on how to best enjoy each plates. We paid 285€ for 2 bottles of wine, 2 “medium” menu (felt like “huge”!) and coffee, which was definitely a steal for the amazing food we’ve had. Definitively one of the best dinners we’ve had, ever, and most definitely the most innovative! Highly recommend to any gourmet!
